Japanese Tomato Salad
Fancy making an extremely simple but utterly delicious Japanese salad dressing? I love this dressing so much that I always make a lot and keep a bottle in the fridge. The intense aroma of soy sauce, rice vinegar and sesame oil blended with grated ginger is almost intoxicating. It is definitely worthwhile skinning the tomato as this greatly improves the texture, becoming so smooth that it melts in your mouth. You will find yourself making another one before you know it.
Ingredients:
Serves 2
2 Tomatoes
¼ Box Salad Cress
Japanese Salad Dressing
● 2 tsp Yutaka Japanese Rice Vinegar
● 2 tsp Yutaka Organic Tamari Soy Sauce
● 1 tsp Sesame Oil
● ¼ tsp Salt
● 1 tsp Sugar
● 1tsp Grated
● Fresh Ginger
How to prepare:
1. To make Japanese salad dressing, place all the ingredients in a glass and mix well. If you do not have a grater, chop the ginger finely instead. (photo – dressing in a glass)
2. To easily skin the tomatoes, drop them gently into a bowl of boiling hot water and then drain after soaking for one minute.. (tomato in hot water)
3. Make a small incision on the tomato with the tip of the knife. The skin should peel away easily by hand. (photo – half peeled tomato on chopping board)
4. Slice the tomato finely on the chopping board, while maintaining its original shape if you can. Place the tomato in a small bowl shaped dish, pour on the dressing and finally garnish with salad cress to serve.
